Customize Wordpress booking forms

I have a booking theme (Traveler) and need to edit the workflow and design of the forms on the frontend used to create the listings and lodgings. --- What I want? Change the forms used to create the Hotel and Rooms. Change the design of the forms. Merge and delete some fields. Use the ‘new’ forms to create and edit the listing through the user dashboard. Keep the autonomy of the theme (create 'kind of listing' from the admin). Use most of the fields. Problem 1: The original forms are too extensive. Are unfriendly. Poor usability. Confusing. Ugly design. Too many fields to create first an Hotel, and then another long form to create a room. Problem 2: If I am the owner of a Hotel or a Cabin, I have several rooms (double, king, single - cabin for 2, cabin for 6, etc) to create and assign to my listing. First, I create the hotel (change concept to Listing) and then I create the Rooms (change concept to Lodging). All well up here. But, if I only want to publish a House or a Department, that doesn’t need to create a room for it, but I am forced to use the second ‘create room’ form.
