Copy e-commerce magento site to a new site + minor changes

Dear Folks,
Will need help to copy existing e-commerce website developed in Magento to a different website. A new website would be a subdomain of the existing website.
Details:
Currently in the existing website there are 2 Categories - Loose Diamonds and Jewellary ; wish to make it in seperate websites for each one of them.
So for Loose Diamonds I will keep them in original website and for Jewellary when Customer clicks Jewellary he should be directed to new website and that new website will be a copy of orginal website where for Loose Diamond details when Customer clicks it will link back to original website.
We can use current Grid format for Jewellary and when we make a copy it to new website just update the Loose diamonds category and create a link where we can link it back to original website. (to see Loose diamonds) "
Existing website has shopping cart, paypal payment connection, database etc ; developed in Magento. It does not have much data except the test data as this is a startup business.
Summary:
In summary copy existing website to a new website , delete Loose diamonds details and create a link back to original website. From original website when clicked on Jewellary it should link to new website.
