Logos to be Redrawn in True scalable Vector / EPS

I have 5 logos that I need 'redrawn' in Adobe Illustrator, so that when they are redone, they will be in a true, scalable, outlined Vector eps format.
Each completed logo should have the ability for me to change the color, stroke, gradient, effects, etc. so if you finish it in layers, do not merge or flatten. I want the ability to modify or remove the graident, etc.
