Converting DVDs to MP4/TS - Looking FFMPEG or VLC specialists

Thank you for your time! I have many movie DVDs and want to convert them into Apple HLS format. I am OK if you can convert them into either MP4 or .TS format. Later, I can segment them into HLS format. 60% of the DVDs have DD 5.1 as sound track and subtitles. I want streams with different bit rates and different audio streams (some with DD 5.1 track and some with stereo track). So, I want to convert the DVDs first into elementary streams and then mux them into MP4/.TS format. For Ex: A DVD should be converted into MP4 with the following streams: a. Video bit rate-2000kbps, audio bit rate - 128kbps, audio channels - stereo b. Video bit rate-2000kbps, audio bit rate - 448kbps, audio channels - 5.1 For the above streams, if we have one video stream, then we can mux it with different audio streams to get 24 different MP4 files. You can use either FFMPEG/VLC. I am also open for third party solution, if the cost is minimal. I am looking for a simple process/automated process to: 1. convert the DVDs (only movie part without menus/extras) into elementary streams 2. create video/audio elementary streams with different bit rates 3. One audio stream with DD 5.1 pass-through track (no encoding) 4. Another audio stream with AAC audio with different bit rates 5. Save subtitles into .SRT file format 6. Add watermark logo on the encoded video 7. Need to take care of audio delay issues (some DVDs have the audio track after 10 to 15 seconds of video) 8. Need to take care of frame rate, deinterlacing issues as the DVDs are from different sources. If you come with good solution for this, I have few other projects on LIVE streaming, transcoding etc., Please reply me with your experience, bid price, required time (to build the encoding process). Once the coders are short listed, I will provide a sample VOB file, which should be converted by satisfying all above 8 requirements.
